Ingredients
- 200g gluten free ginger biscuits
- 500g mascarpone cheese
- 1.5oz icing sugar
- 2oz melted butter
- Finely grated zest of 2 limes
Method
- Mix together crushed biscuits and butter
- Press mixture into the base of a 7 inch tin
- Mix cheese, lime, icing sugar in a bowl, once mixed spread over the base in the tin
- Chill for 30 minutes then decorate and serve as required
