Gluten Free Roasted Vegetable Quiche

Ingredients for a 9 inch quiche

  • Oast To Host 9" pre-baked pastry base
  • 50g Cheddar cheese we use a strong flavoured one
  • 2 Roasted red onions
  • 1 roasted courgette
  • 1/2 Roasted pepper
  • 4 Cherry tomatoes.halved.
  •  a generous sprinkle of Fresh thyme
  •  Salt and pepper
  • 2 1/2 Eggs & 10  fl oz double cream lightly beaten together.


  1. Take your pre-baked pastry case (baked with Oast to Host Pastry Blend)
  2. Roast your veg in oven with a little oil or butter ( some supermarkets sell a bag of chopped vegetables for roasting  which works really well with a few fresh tomatoes added, yum)
  3. thinly cover base with 35g grated cheddar cheese, place your roasted veg selection.
  4. Sprinkle with fresh thyme and season with salt and pepper
  5. Pour egg and cream mixture over the vegetables and  sprinkle with remaining grated cheddar cheese. 
  6. Cook at 160 degrees for 20-30 minutes
