FRUIT COBBLER

A delicious alternative to Crumble
Serves 8
INGREDIENTS
1kg fruit - could be fresh, frozen, mixed
For fresh fruit - Juice of 1 lemon/lime/orange
2 tabs soft brown sugar
1 tsp ground cinamon (optional)
8oz Oast to Host Cake Flour
1 teaspoon Baking Powder (GF)
1 teaspoon ground cinamon or ginger (optional)
1/2 tsp Salt
6oz Granulated Sugar
4oz block butter (diced)
1oz hemp seed hearts or nibbed nuts
8oz buttermilk
Demerera to sprinkle on top
METHOD
If using fresh fruit - peel/chop, sprinkle with juice, cinnamon and sugar.  Place in oven 180C for 15 minutes.  If using frozen fruit - defrost sprinkle with sugar (& spice if liked) and bake for 15 mins.
Place all dry ingredient plus butter in food processor with sharp blade or if making by hand rub fat/flour mixture through fingers to create a 'crumble' mixture.  Stir in hemp seed hearts/nibbed nuts before folding in buttermilk till all is combined.
Drop spoonfuls onto pre prepared fruit, sprinkle with demerera sugar before placing in oven at 180-200C for 30-40 minutes.  Allow to cool for 5 minutes and serve with cream, ice cream or custard.
